This cutting-edge machine learning technology has already been incorporated into more than 70 of Mondelez’s offerings, leading to exciting new creations like the “Gluten Free Golden Oreo” and a revamped Chips Ahoy recipe. Developed in collaboration with the software consultancy Fourkind, this tool analyzes sensory elements such as aroma and taste sensations, measuring aspects like “buttery richness,” “in-mouth saltiness,” and “vanilla depth.”

Even though machines lack taste buds and olfactory senses, Mondelez still relies on human taste testers to ensure that the flavors developed by the AI meet their high standards. Kevin Wallenstein, the manager of biscuit modeling research and development, highlighted the rigorous nature of their taste testing process, describing it as quite thorough.

The journey of this flavor discovery tool began in 2019, leveraging historical data on recipes and ingredients to inspire new taste profiles. Initially, the AI sometimes proposed unconventional ideas, like cookies with too much baking soda. However, by incorporating feedback from human “brand stewards,” Mondelez has fine-tuned its machine-learning system to create more practical and delightful flavor possibilities.
